Step-by-Step Instructions

Step 1: Melt the butter and chocolate. Melt the butter until it’s hot and bubbling, then add the chopped chocolate. Let it sit for about a minute before whisking; the residual heat from the butter is usually enough to melt the chocolate completely. If a few pieces remain, microwave the mixture briefly and whisk again until smooth and glossy.

Ingredients 

  • 1 cup (2 sticks) unsalted butter
  • 8 oz bittersweet or semisweet chocolate, roughly chopped (I use Ghirardelli bars)
  • 4 large eggs
  • ½ teaspoon salt
  • 1 cup granulated sugar
  • 1 cup (packed) dark brown sugar
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour, spooned into measuring cup and leveled-off

Instructions

  • Preheat the oven to 350°F (175°C) and set a rack in the middle position. Line a 9 x 13-in (23 x 33-cm) pan with parchment paper (bring parchment up sides of pan so there is a slight overhang) and grease with butter or nonstick cooking spray.
  • Place the butter in a medium microwave-safe bowl and melt in the microwave until bubbling. Add the chocolate and whisk until the chocolate is completely melted. The heat from the butter should be enough to melt the chocolate completely, but if not, place the chocolate-butter mixture in the microwave and heat for 20 seconds or so, then whisk again. (Alternatively, combine the butter and chocolate in a heat proof bowl and set over a pan of simmering water. Stir occasionally until melted.)
  • Whisk the eggs in a large bowl. Add the salt, granulated sugar, brown sugar, and vanilla; whisk until smooth (be sure no lumps of brown sugar remain). Whisk in the chocolate-butter mixture, then add the flour and whisk until the batter is uniform.
  • Pour the batter into the prepared pan and spread evenly. Bake for about 45 minutes, until the top has formed a shiny crust and the batter is moderately firm. Cool completely in the pan on a rack.
  • Use the parchment overhang to lift the brownies out of the pan, transfer them to a cutting board, and separate the parchment from the edges. Using a sharp knife, trim away the edges and cut the brownies into 24 (2-in) squares.

Notes

Make-Ahead/Freezing Instructions: The brownies can be stored at room temperature for up to 4 days or refrigerated to extend their shelf life by a day or two. They can be frozen for up to 3 months; after they are completely cooled, cut them into squares, wrap tightly in foil, and then place them in an airtight container or sealable plastic bag. Thaw overnight on the counter before serving.

    Look no further, this is the perfect brownie recipe! I consider myself a very seasoned baker, yet the perfect brownie recipe has always eluded me. The best store bought in my opinion is the Ghirardelli brownie mix, and I surprisingly have been hard pressed to find a made from scratch recipe too beat it. They are always too fudgy, too dense, too rich, too sweet or not sweet enough, or don’t have the beloved crackled top.

    This recipe checks ALL of the boxes and then some! The flavor is so complex without being too fudgy or too rich. And full confession, I had to run a a neighborhood Walmart to make these last minute for a friend, and had to use the Walmart brand chocolate bars. Still divine! I can’t wait to try it again with Ghirardelli bars. And I can’t forget to mention another huge bonus… they are SO easy to make!! My search is is over!

  • I would like to use white chocolate instead. Do I need to adjust the amount of sugar? (Because white chocolate tends to be sweeter than dark chocolate)

  • hey, so i followed everything i just did different chocolate, when they were done and i took them out the oven, the top and sides are good, but the insides are very pudding/mush like. i let them sit for awhile and had them in the fridge for awhile too and i even put them back in the oven for a good bit. is there any way i can fix this?

    I am 83 years old, and I have only made brownies from a box until I made this recipe! I have to say, they were awesome. I cut the recipe in half, used 4 oz Trader Joe’s One Pound 70% bar, followed the recipe as written. I used an 8” square pan, baked it about 30 minutes. I will never use a box again!
