High heat, just the right seasoning, and a drizzle of balsamic vinegar and honey take this roasted Brussels sprouts recipe up a notch.

Roasting is the absolute best way to cook Brussels sprouts. The high heat brings out their natural sweetness and creates deeply browned, caramelized edges. They’re delicious simply roasted with olive oil, salt, and pepper, but I like to finish them off with a drizzle of balsamic vinegar and honey—it adds just enough sweet-tart contrast to make the flavors pop. This roasted Brussels sprouts recipe is simple enough for weeknight dinners, but since Brussels sprouts pair so well with special-occasion roasts, they’re right at home on the Thanksgiving, Christmas, or Easter table.
“Best Brussels sprouts ever! My son and I ate the whole batch in one sitting.”
What You’ll Need To Make Crispy Roasted Brussels Sprouts

- Brussels sprouts: Look for firm, bright green sprouts with tightly packed leaves. I prefer larger sprouts for roasting because they have time to develop deep caramelization before becoming overly soft. Cut them into similarly sized pieces so they cook evenly.
- Olive oil: Helps the sprouts brown and crisp in the oven; a little more is added after roasting as part of the finish.
- Balsamic vinegar & honey: This sweet-tangy combination balances the sprouts’ earthy flavor. Add it after roasting so the sugars don’t scorch in the hot oven.
- Salt & pepper: Season the sprouts before roasting and adjust to taste at the end.

How To Make Roasted Brussels Sprouts
Trim and halve the Brussels sprouts, quartering any very large ones so the pieces are roughly the same size. Toss with olive oil, salt, and pepper, then spread them out on the baking sheet—crowding traps steam and works against browning.

Roast and glaze: Slide the pan into the oven and roast until the sprouts are tender inside and deeply golden brown outside. While the sprouts are still hot, toss them with the remaining olive oil, balsamic vinegar, and honey. Adding the glaze after roasting gives you the sweet-tangy finish without risking burnt honey or balsamic. Taste and adjust the seasoning, then serve right away.

Variation: For a festive holiday version, toss the finished Brussels sprouts with toasted walnuts or pecans and dried cranberries.
What to Serve with Roasted Brussels Sprouts
Serve these roasted Brussels sprouts with my roast chicken and creamy mashed potatoes. They’re also delicious alongside beef tenderloin, glazed pork tenderloin, or Thanskgiving turkey for holiday dinners.

I am not a real fan of brussel sprouts, but I was feeling heathy, so I found your recipe for the Roasted brussel sprouts with balsamic vinegar and honey and I must say. I am glad I bought them…delicious recipe.
Perfect.
I’ve attempted Brussels sprouts a few times, never being overly impressed with the results. However–this time they really turned out good! I will use this recipe again for sure.
Great recipe, although I think I may have improved upon it on my second go round. I added diced cooked bacon and a little bit of chopped garlic dueing the last 7 minutes of cooking, then proceeded with the recipe as written.
Part of my weekly routine is to walk to the local grocery store, pick up some sales produce and then come home and cook them in new and interesting ways. This week had brussels sprouts on sale and I opted to use the Roasted Brussels Sprouts with Balsamic Vinegar & Honey recipe. On the first try it came out phenomenal. Even with never having cooked brussels sprouts before the recipe was simple and clear and took only a short time to prepare serving three. I would definitely recomend this recipe for anyone looking for a simple healthy dish for your day.
(On a note, I’m considering substituting the last Tbsp of olive oil for walnut oil for a little extra bit of nuttiness and nutrition. I might even consider some shaved almonds to be mixed in to give the recipe some variety to keep it fresh and interesting.)
I used roasted sesame seeds. Yummy!
Soooooo good! Love this Brussels sprouts recipe. I am usually not very big on Brussels Sprouts (I have tried making them other ways before and hadn’t like them), but they were my favorite part of the meal with this recipe. I can’t wait to make them again for more family and friends to try too. Thank you!
Roasting brussel sprouts is a refreshing change from steaming. I recommend adding pine nuts to heighten the experience.
Great thought! I love pine nuts…I’ll try that next time!
awesome recipe the family loved the sprouts
I chose this recipe over Ina Garten’s and am so glad I did. I look forward to enjoying these brussel sprouts on my lunchtime salads this week!
