Chai-Spiced Banana Bread

This chai spiced banana bread recipe is easy to make, stays moist for days, and freezes beautifully. It’s perfect for breakfast, an afternoon coffee break, or a cozy homemade gift.

Chai is the actual word for tea in many countries but when we say chai in the States, we’re usually referring to Masala chai, which is a smooth and calming beverage made of black tea, milk, and fragrant Indian spices. Its flavor goes beautifully with banana bread, so I’ve taken one of my favorite banana bread recipes and subtly infused it with warm chai spices like cardamom, cinnamon, ginger, and allspice.

What You’ll Need To Make Chai-Spiced Banana Bread

- Unsalted butter: Adds richness and flavor. Creaming it with the sugar incorporates air into the batter, giving the loaf a lighter texture.
- Granulated sugar: Sweetens the loaf and helps create a tender crumb when creamed with the butter.
- Eggs: Bind the batter together and add structure and richness. Using room-temperature eggs helps them incorporate more smoothly into the creamed butter and sugar.
- All-purpose flour: Provides the structure for the loaf. Spoon it into the measuring cup and level it off rather than scooping directly, so you don’t pack in too much and end up with a dense, dry bread.
- Baking soda: The leavener that helps the loaf rise, reacting with the acidity in the sour cream and bananas.
- Ground cardamom, cinnamon, ginger, and allspice: This blend of warm spices is what gives the loaf its “chai” character, adding a fragrant, cozy depth that sets it apart from a classic banana bread.
- Salt: Balances the sweetness and rounds out the spices.
- Mashed bananas: The star flavor of the loaf. Use very ripe, well-spotted bananas—they’re sweeter and mash more easily, giving you the most banana flavor and moisture. (Frozen bananas work well too—see my post how to freeze bananas for details on freezing and thawing.)
- Sour cream: Adds moisture and a subtle tang that keeps the crumb tender, balancing out the warmth of the spices.
- Vanilla extract: Rounds out and enhances the other flavors.
- Walnuts: Add crunch and a nutty flavor that pairs well with the chai spices, if you like some texture in your loaf.

Step-by-Step Instructions
Step 1: Cream the butter and sugar. Beat until light and fluffy, about 2 minutes. This step incorporates air into the batter, which is part of what gives the finished loaf its light texture, so don’t shortchange it.

Step 2: Add the eggs. Beat them in one at a time, letting each one fully incorporate before adding the next. This keeps the batter from looking curdled or separated, and scraping down the sides of the bowl as you go ensures everything mixes in evenly.


Step 3: Mix the dry ingredients. In a separate bowl, whisk together the flour, baking soda, spices, and salt. Combining these separately first ensures the spices and leavening are evenly distributed throughout, so you won’t get a bite that’s overly spiced or bland, or a spot that doesn’t rise as well.


Step 4: Combine the wet and dry ingredients. Add the dry ingredients to the butter mixture and beat gently just until combined. Ths is a good moment to slow down, since overmixing here develops the gluten in the flour and can leave you with a denser, tougher loaf.


Step 5: Add the bananas, sour cream, and vanilla. Mix on low speed until just combined. The batter will loosen up and turn fragrant from the spices at this point. Stir in the walnuts, if using, by hand for a bit more control so you don’t overwork the batter at the finish line.


Step 6: Bake and cool. Bake until deep golden brown and a tester comes out clean. Let it rest in the pan for about 10 minutes before turning it out onto a rack to cool completely. This brief rest helps it hold together as you unmold it. It’s especially good served warm or toasted, which brings out the spices even more.

Chai-Spiced Banana Bread

Ingredients
- ½ cup (1 stick) unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs, at room temperature
- 1½ cups all-purpose flour, spooned into measuring cup and leveled-off
- 1 teaspoon baking soda
- ¾ teaspoon ground cardamom
- ¾ teaspoon cinnamon
- ¼ teaspoon ground ginger
- ¼ teaspoon allspice
- ¾ teaspoon salt
- 1 cup mashed very ripe bananas, from 2 to 3 bananas
- ½ cup sour cream
- 1 teaspoon vanilla
- ½ cup chopped walnuts (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9 x 5-in (23 x 12.5-cm) loaf pan with non-stick cooking spray.
- In a large bowl or electric mixer fitted with the paddle attachment, beat the butter and sugar until light and fluffy, about 2 minutes. Beat in eggs one at a time, incorporating well after each addition. Scrape down sides of bowl as necessary.
- In a medium bowl, whisk together the flour, baking soda, cardamom, cinnamon, ginger, allspice, and salt. Add to the butter mixture and beat gently until just combined. Add bananas, sour cream and vanilla and mix on low speed until just combined. Gently stir in nuts if using.
- Pour batter into prepared loaf pan and bake until deep golden brown and cake tester inserted into center comes out clean, 60 to 70 minutes. Let rest in pan for about 10 minutes, then turn out onto rack to cool completely. This bread is best enjoyed warm out of the oven or toasted.

I had some “dead” bananas that I wanted to use up and I’m so glad I made this. I easily threw it together on a Saturday morning, with kids tugging at my leg trying to drink my coffee while it was still hot. Can I use milk or half & half in place of sour cream? I would use Greek yogurt but I’m out of that too ugh. I wanna make this so bad! Thanks!!

Made this today. So good! So moist. This recipe is a keeper.
I love the flavour of this recipe, but I keep finding the loaf comes out too dense (almost bordering on not cooked in the middle). This is quite frustrating because I always check by poking it with a skewer, and don’t take it out of the oven until the skewer comes out clean.
I’ve tried increasing the temperature in the oven, but I just started to burn the top of the loaf.
Does anyone have any advice? I really want to get this recipe perfect because it tastes so good!

I forgot to add that we use 2/3 the amount of sugar and that’s the perfect sweetness for us.
